The team at Moe's Cantina is proud of their Northern Mexican origin, and honored to bring Chicago a taste of the region’s unique culture and cuisine. Marked by meat-centric dishes, smoky flavor from the open flame and fresh, all natural ingredients, Moe’s Cantina’s staple menu by owner Sam Sanchez has taken guests on a culinary journey for the past decade.
Now, Moe's Cantina would like to introduce Chicago to all of the flavorful regions of Mexico by inviting top chefs from around the country into their River North kitchen. Each month Moe's Cantina will welcome a new chef, and each week he or she will prepare a new, limited menu with their signature dishes.
The first guest chef joining them, hailing from Monterrey, NL, Mexico, is Chef Jorge Guadiana. Most recently he was the chef at CRU The Little Wine Bistro in Monterrey. Chef Guadiana has now started a new business concept that offers private, fine dining experiences to corporate and VIP clients. His style of cooking is gourmet Northwestern Mexican cuisine. Chef Guadiana uses special roasting and grilling techniques to add intense flavors from spices and herbs to his meat. With a little Jewish influence, coupled with the Northern Mexican influence, he has achieved unique flavors worthy of Mexico. “I think a chef must always have an attitude of service. This means that we are always looking for continuous improvement, satisfaction and smiles from our guests. Added to this, as a Mexican Chef, I find opportunities God gives us to bring traditional flavors from around the world to show people that Mexican flavors are more complex, with explosions of flavors as many know,” said Guadiana. He hopes to visit all of Chicago’s tourist attractions, eat at new restaurants around the city, and attend a Bears game during his time here.
