Wake ‘n Bacon is now open for dinner on weekends. As the space itself transforms from day to night, a new dinner menu will be served every Friday through Sunday from 4 p.m. to 9 p.m. featuring American comfort food with an Asian and Latin twist.
Conceptualized by hospitality veterans and husband and wife duo Gabriel and Sarah Ayala, Wake ‘n Bacon opened in October 2020 with a floral-filled space that serves a food menu with an optional dose of CBD. Now they’re creating a dinner experience.
Working with executive chef Will Silas, the couple was able to incorporate both of their multi-cultural roots into the menu, with dishes from Taiwan, China, Argentina, El Salvador, the Philippines and more. “Infusing the essence of our diverse cultural heritage, Wake ’n Bacon curates a harmonious fusion that promises to awaken your taste buds,” said Sarah Ayala. “We are looking forward to welcoming guests to join us as we redefine dining after dark in our whimsical space.”
The new dinner menu options include:
Bombazo Pambazo, Mexican-style sandwich filled with chorizo, potatoes, avocado, sour cream, and pineapple pickled red onions, served on bolillo bread and brushed with guajillo salsa, then griddled
Abso-Luis Delish Tacos, house-marinated skirt steak topped with onion, cilantro and salsa verde served in corn tortillas
South By SouthEast Ribs, house smoked spare ribs with ginger, garlic, soy sauce, sesame oil, and gojuchang
Sweet Salmon Couscous, Asian style sweet & tangy glazed salmon on a bed of citrus herbed couscous
Wake ’n Bacon Burger, an all beef patty, pepper jack cheese, caramelized onions, chipotle mayo, mustard pickles, and house-made bacon jam on a brioche bun
Guests can pair their dinner with an array of local beers, mocktails and seasonal cocktails like the following:
Liquid Sunshine, Ketel One Peach and Orange Blossom, orange juice, Calamansi Sour Mix, and peach syrup
Guava Me Passion, Casa Magdalena Rum, lime juice, and guava passion fruit mix
