Toro Chicago (200 N Columbus Drive) has revealed the beverage program for its new location, which offers bespoke cocktails, and announced that James Vanderbosch will serve as Beverage Manager for the new restaurant. Vanderbosch brings over a decade’s worth of experience in the hospitality industry to Toro Chicago, including time spent with The Alinea Group, SOMOS Hospitality Group, Industry Ales and more.
“My goal is to craft cocktails that embody the spirit of Chicago,” said Vanderbosch. “I want to celebrate and accentuate Chef Sandoval’s beverage program, and find new ways to incorporate more local ingredients into our mix. My focus is to get people excited to visit us and make our guests feel good one sip at a time.”
Toro Chicago’s beverage program is a collection of cocktails, riffs on the classics, as well as Latin American spirits, paired to accompany Chef Sandoval’s Pan-Latin cuisine. Classic cocktails can be found throughout Toro Chicago’s beverage menu including the Passion Pisco Sour, Paper Beach, Reforma Avenue and more.
Toro Chicago’s Passion Pisco Sour, inspired by the national cocktail of Peru and Chile, features pisco, passion fruit purée, lychee syrup, lime juice, aquafaba, apricot liqueur and bitters. Diners can find the Paper Beach made with guava-infused cachaça, Aperol, amaro Montenegro and lime. The restaurant’s Reforma Avenue, a tribute to one of Mexico’s streets, is made with red pepper-infused tequila blanco, hibiscus syrup, passion fruit purée, lime juice and sparkling wine.
In addition to the classics, the new and spicy Incan Goddess features Peruvian whiskey mixed with tequila, habanero bitters, and agave. The new Island Oasis comes with coconut rum, sake, orgeat, lime, pineapple juice and grapefruit bitters. The new table-side Flaming Coffee is presented on a stand-alone cart, and the coffee is mixed upon order with the diner's choice of rum, tequila or bourbon, and finished with a ‘flamed’ cinnamon and sugar rim.
The restaurant also partnered with Chicago breweries like Revolution Brewing, Dovetail Brewery, Cruz Blanca Brewery and Marz Brewing for their various on-tap beer selections. Toro Chicago also offers various imported bottles and cans including Modelo, Charro Cerveza, and Cusquena among others.
