Rob Katz, co-founder of Boka Restaurant Group, and Matt Ruder are introducing a new cocktail lounge: The Pearl Club. Located in West Town, at 495 N Milwaukee Avenue, The Pearl Club will blend the old-world London cocktail scene with the modern approach of cocktail salons here in Chicago and in New York City. 

The cocktail menu features spirits and riffs on classics, by Paolo Acuna, formerly of Lazy Bird. Examples include:

    • Bushmill’s Sherry Black Bush, Belle de Brillet, Ginger Honey, Lemon, Ginger Beer, Peat
  • Jaylee’s Pimm’s Cup
    • Pimm’s, Koval Barrel Aged Gin, Cappelletti Pasubio Vino Amaro, Dragon Fruit, Lemon
  • Trambler
    • Smoked Gouda Washed Jose Cuervo Tradicional, Giffard’s Creme de Mure, Miny Syrup, Lime Juice
  • Phoenix
    • Koval Amburana Rye, Sweet Vermouth Blend, Fino Sherry, Bigelett China China Orange Bitters
  • Clarified Ube Colada
    • SelvaRey Coconut, Ube, Coconut Water, Lemon

The beverage program is complemented by a petite menu of bites by Chef Isaac Blinn (Cira, Porto) including shrimp cocktail, pigs-in-a-blanket, double crunch chicken nuggets, steak tartare, and a chef’s selection of caviar served with housemade chive and shallot potato chips.

Rounding out the team is General Manager Manny Calderon (Porto, Mama Delia). 

“What initially began as a real estate partnership in an exciting area blossomed into a larger opportunity to help write the next chapter for one of Chicago’s most iconic locations, which most recently housed Emmit’s Irish Pub,” said Rob Katz. “I am just as excited about investing in this neighborhood, as I was enamored with investing on Randolph Row and in the Fulton Market District a dozen years ago. Matt and I think that The Pearl Club will be the perfect backdrop to help usher in a new era for the neighborhood.”
