The Drake Oak Brook is making soup the star of the show with the launch of a $1,893 rendition of an unconventional, 131-year-old comfort food: Bookbinder Soup.
A nod to the exact year it was created in 1863 by Samuel Bookbinder, the culinary creatives at the estate have refreshed detail of the seafood bisque—which originated as a turtle soup made with snapping turtles with red snapper and dry sherry.
Debuting in March, the historic Colonial Room once known to host members of the Royal Family as well as Sinatra and his “Rat Pack” will honor the dish by:
Cooking it with Louis XIII Cognac in place of the dry sherry
Serving the dish alongside a snifter of the luxury spirit to sip on
Topping with Ossetra caviar
Adding red snapper flown in from a red snapper fishery in the Gulf of Mexico
