Josh Carl and Joseph De Vito have announced the opening of their globally-inspired restaurant, Stockton (1009 N. Rush St.) will take place on Thursday, October 10. Combining cuisine and cocktails, Stockton will offer live music and nightlife to follow with the opening of The Lounge at Stockton in November.
The redesigned space will seat 200 inside the restaurant, showcasing Chicago bricks, flanked with live plant walls, velvet banquettes and rattan seating.
“I’m looking forward to sharing my inspiration to create beautiful food and an indulgent experience for dining enthusiasts,” said Gerardo Martinez, executive chef at Stockton.
Stockton’s seafood-influenced menu is balanced with sharable beef and chicken dishes, specialty pasta and vegan offerings. Cold Share Plates include Spicy Tuna Tartar on crispy rice, Seafood Salad topped with jumbo shrimp and Truffle Burrata garnished with fried rosemary.
A Seafood Tower, offered in two sizes, will have lobster, oysters, king crab and jumbo gulf shrimp, or go for the Raw Bar and choose your own chilled delicacies.
Hot Share Plates sizzle with Asian BBQ Baos stuffed with braised Korean BBQ short ribs; marinated Beef Kabobs alongside chimichurri sauce; Spanish Octopus with roasted fingerling potatoes and herb pesto; Spicy RockShrimp; and Lobster Mac tossed in a four-cheese sauce.
Large Plates consist of the 8oz Grilled Hanger Steak, Jack’d Up Fried Rice topped with hoisin chicken, sweet chili shrimp and fried shallots and Gemelli Pasta flavored by sambal and crumbled sausage. Sushi-lovers will savor the Torched Salmon, Angry Jalapeño (spicy tuna) and unique Seared Ribeye rolls, to name a few.
Vegan dishes include Spinach Edamame Hummus with grilled pita, Chilled GF Vegan Pasta tossed with seasonal vegetables and Stuffed Mushrooms with kalamata olives and peppers.
Stockton will offer a brunch of bites and shared plates ranging from the Acai Bowl, Cinnamon Roll Pancakes with vanilla frostingand Avocado Toast topped with pomegranate seeds. Specialty cocktails like the Hangover Vanilla Latte and Hibiscus Mimosa round out the daytime selections. Brunch will be served on Saturday and Sunday.
The Bar will feature a ssteel and mirrored backsplash, with additional seating along a wall and with a custom booth. The dining menu will be available in the Bar area, along with a cocktail, wine and sake list. Cocktailofferings are the Sweet N’ Spicy stirred with Casamigos Mezcal and grapefruit bitters over a Thai chili ice cube, Pinky Out blending Beefeater Pink, Aperol and strawberry ice cubes and Matcha Ordinary Mojito mixed with Bacardi Superior and mint infused ice. Wines, including Bubbles, White, Rosé and Red, are offered by the glass or bottle. Signature drinks and dishes will be offered during happy hour.
The Lounge at Stockton, to open in November, is a venue where clientele will be privy to cocktails and live music. The space will feature a bronze-finished bar surrounded by plush couches, with the stage as the focal point for live music and entertainment. The Lounge will deliver a defined selection of dishes from the dining menu, along with exclusive cocktails and wine list.
Stockton will be open Monday through Friday from 3:00 p.m. to 2:00 a.m.; Saturday from 10:00 a.m. to 2:00 p.m. and 3:00 p.m. to 3:00 a.m.; and Sunday from 10:00 a.m. to 2:00 p.m. and 3:00 p.m. to 2:00 a.m.
