Del Frisco’s Double Eagle Steak House will host round two of “Somm Wars,” a three-part competition highlighting female sommeliers in the Del Frisco’s wine program. The series will kick off in New York on October 13, continue to Chicago on October 21, and end in Dallas on October 27, when the winner will be announced.
On Friday, October 21, the sommeliers will each create pairings for a four-course meal prepared by Del Frisco’s Executive Chef Javier Fuentes. Chicago’s Wine Director Amy Lutchen will lead the charge using her compelling expertise as a Certified Sommelier through the Court of Master Sommeliers, competing against New York’s Crystl Horton and Dallas’ Chantel Daves.
Try three wines with each course, one from each sommelier, and have the opportunity to vote for their favorite pairing. A panel of local wine experts will also weigh in on the competition and share thoughts with guests after ballots are collected.
The four-course dinner features a Gulf Grouper with smoked salmon hash, local corn chowder and saffron shitake confit, followed by Butternut Squash Risotto with mascarpone, pancetta lardons and five spice pepitas. The star of the meal will be a Simply Seared A-7 Wagyu Beef with foie gras-charred leek ravioli, rissole potatoes, and a mission fig and black garlic reduction. Dinner ends on the sweet note of Pear Tart with grilled pears, streusel, French vanilla gelato and a pomegranate-port glaze.
