The Fifty/50 Restaurant Group’s Roots Pizza has announced its collaborative beer dinner with local craft brewery Off Color Brewing. The modern pizzeria will guide beer fanatics through a four-course pairing menu that will be offered exclusively at Roots Pizza’s South Loop location at 744 S Dearborn St. on March 30 and Old Town location at 1610 N Wells St. on March 31. 

Carefully curated by Laura McSay, Beer Director at The Fifty/50 Restaurant Group, the four-course pairing menu matches ales and stouts with bites from the pizzeria, offering a blend of food and drink. Roots Pizza has plans to host additional specialty beer dinners in June, September and December of this year, each featuring a different local craft brewery. 

“You hear about wine pairing dinners all the time, and we wanted to switch it up for our guests by showcasing the many ways beer can complement a dish,” said McSay. “Our beer series allows us to support local breweries in the area and highlight their unique menu offerings. Off Color Brewing is a great partner for our first specialty beer dinner of the year, and I’m excited to see where these partnerships take us.”  

The “Off Color Brewing Specialty Beer Dinner” four-course pairing menu for $62.63 per ticket includes:

  • Course 1
    • Beer: Market Rate: American wild ale aged in wine barrels with strawberries
    • Dish: BLT Wedge Salad: Little gem, bacon lardons, blue cheese, tomato, balsamic onions 
  • Course 2
    • Beer: Kilobeer: Grisette-style ale
    • Dish: Fettuccine Carbonara: Black pepper, egg, country ham 
  • Course 3
    • Beer: Well Fed Sheep: Scotch-style ale brewed with honey
    • Dish: Bone-In Pork Chop: Sweet potato dauphinoise, braised baby fennel and malt jus, malt crust gremolata
  • Course 4
    • Beer: DinoS'mores: Imperial marshmallow stout
    • Dish: Chocolate Caramel Tart: Malt caramel, dark chocolate ganache, malt crust crumble 

“After spending the better part of the last two years on the couch eating strips of pizza while watching the entire catalog of Disney+ on the couch, I am excited to emerge and once again experience the fun and imagination of Chicago's culinary scene at Roots! The amount of thought and effort that the Roots team put into the pairings with a few of our most offbeat beers is going to remind us all what we've been missing,” said David Bleitner, co-founder of Off Color Brewing.
