ROOH owners Manish and Rina Mallick are launching a new tasting menu experience, ROOP, available for dinner every Wednesday-Sunday starting August 23, designed in collaboration with Mike Cornelissen, Executive Chef and Owner of RijnZicht in the Netherlands. Offering both vegetarian and non-vegetarian experiences, the new tasting menu lets guests experience dishes from various Indian regions. The a la carte menu is also getting a makeover from Executive Chef Rohit Thaledi, with a series of new dishes featured on the menu including Saag Paneer Kofta, Goan Crab Cakes with a Xec Xec Sauce and Gulab Jamun Cheesecake.
Chef Mike Cornelissen announced the launch of his new Indian menu, combining his cooking techniques with the flavors of Indian cuisine, inspired by his travels and exploration of Indian culture. On his inspiration behind the tasting menu, “My goal was to preserve the authentic flavors of India while giving each dish a modern and personal twist,” said Chef Cornelissen. “I want to take my guests on a journey that not only surprises them but also connects them with India’s rich cultural traditions.”
Menu options include Vada Pav Reimagined, offering a twist on the classic Indian street food; Scallop with XecXec, served in an edible shell made of spices; Rogan Josh with Smoked Yogurt and Spicy Papaya Ice Cream, a modern take on a Kashmiri classic with a combination of sweet and savory flavors; Perfected Gulab Jamun, an elevated version of the classic Indiandessert; and a reimagined take on Rooh’s classic Butter Chicken with Foie Gras.
