After decades of serving pizza to friends and Chicago restaurateurs in
their Gold Coast home, husband and wife team Robert and Dana Garvey are
opening
Robert’s Pizza Company on March 30. Robert, a certified Pizziolla, has spent over 15 years perfecting the recipe for what he affectionately calls, ‘Za Dough’.

Robert’s Pizza Company will offer a rotating lineup of up to 15 gourmet brick-oven pizzas, “create-your-own” pizzas with toppings from select ingredients and the signature Robert’s Pizza Flight. Similar to a four course meal, pizza flights include a salad pizza, white pizza, entrée pizza, and finally, Robert’s original dessert pizza. Some of the favorites on the menu include:
Huevos Rancheros pizza: refried
black bean spread topped with pepper jack cheese, fresh pico de gallo
and two sunny side up eggs, garnished with cilantro
Prosciutto and Arugula pizza: fresh mozzarella, cherry tomatoes, olive oil, lemon vinaigrette and shaved parmesan
To accompany the thin crust pies, Robert’s Pizza Company will have a
selection of local craft beers, a specialty cocktail menu and variety of
wines designed by his family in Piemonte,
Italy. The wine and craft beer menus have been carefully chosen to pair with various items on the menu, and will rotate frequently to complement the seasonal pizza offerings.
