Greg Wade and his home-grown Chicago bakery Publican Quality Bread have announced plans to open a brand-new Publican Quality Bread storefront in Oak Park, slated for late fall 2023. The new 1,600 square foot bakery, which will be located at 211 Harrison Street, formerly home to Rare Bird Preserves in Oak Park’s Arts District, is in partnership with One Off Hospitality, the team behind Chicago restaurants such as The Publican, Publican Quality Meats, avec, Big Star and The Violet Hour. 

“Publican Quality Bread is on the heels of celebrating 10 years of serving Chicago—first through the many incredible restaurants throughout the city, then through our bakery that opened in West Town last year, and now, for the first very time, outside of the city limits. We’re honored to bring what we do best to the community of Oak Park and we’re thrilled with how welcoming and receptive the folks in the neighborhood have already been to our team,” says Wade. 

Publican Quality Bread Oak Park will closely mirror that of its flagship West Town location with the gamut of from-scratch offerings and rotating specialties. Morning deliveries from PQB’s warehouse bakery will supplement on-site baking to usher in a lineup of sweet and savory pastries, Wade’s signature long-fermented bread and ancient grain loaves, and more. Afternoons will roll out with both grab-and-go fare, like farm-fresh salads and deli sandwiches, as well as made-to-order offerings at the counter; Oak Park patrons will be offered OG classics like The Big Sandwich, Tartines, and Jambon-Beurre. With expanded service through 8 p.m., Wade plans to pilot a daily pizza program spotlighting Roman-style al taglio (by the cut). Echoing Publican Quality Bread’s Friday-through-Sunday exclusives, PQB Oak Park will supply weekenders with baker’s whim specials: twice-baked croissants, brioche-style donuts and savory turnovers, all made with locally-sourced produce, meats and cheeses. Publican Quality Breads will continue its partnership with La Colombe at the forthcoming Oak Park satellite, offering coffee and espresso-based bevvies, alongside beer and wine available all day.
