Pilot Project has teamed up with Logan Square’s Daisies to create Bloom, a vermouth-inspired hard kombucha with notes of strawberry, rhubarb, orange blossom, lemon and botanicals. It’s complex in profile and vibrant in appearance.
Bloom will only be available at Daisies and Pilot Project Brewing in limited quantities. It will be priced at $14.99 per 500 mL bottle to-go.
Bloom is just one of several local and national collaborations that Pilot Project has in the works, including an upcoming partnership with Le Bouchon.
Pilot Project is a brewery incubator, tasting room & cafe located in Chicago’s Logan Square neighborhood. Pilot Project was launched as a collaborative and artistically curious space to help support talented brewers in an industry with exceptionally high barriers.
