Rosemont’s Parkway Bank Park entertainment district (5501 Park Place, Rosemont) will expand its dining offerings with the opening of Saltwater Coastal Grill this spring. The new restaurant will bring coastal-style cuisine to Rosemont in a nautical space. Located at 5509 Park Place, Saltwater Coastal will feature a fusion of global-inspired, land and seaside fare including a Raw and Omakase Bar with a Mediterranean flair.
  
“The Village of Rosemont is thrilled to welcome Saltwater Coastal Grill to our entertainment district’s impressive lineup of dining offerings,” said Rosemont Mayor Brad Stephens. “The restaurant’s fresh seafood and sushi offerings will further establish Rosemont as one of the top dining destinations in the area.”  
  
The restaurant will be home to a custom-built “Fish Room” walk-in cooler specially designed for the cutting and preparation of seafood. Maintaining a constant temperature of 35 degrees, allowing Chef Cruz Goler and his team of chefs to create seafood dishes. 
  
Menu options include Crispy Haloumi Cheese with Aleppo-roasted carrots, olive oil and naan, Whole Roasted Beets with tabbouleh salad and horseradish cream, and Whole Grilled Mediterranean Orata with spinach, green olives, fine herbs and charred lemons. Saltwater Coastal celebrates offerings from the sea and that starts with the Raw Bar – Fresh East Coast Oyster Selection, New England Cold Water Half Lobster with saffron aioli, Wild King Crab Legs with pimento mayo, and Seafood Towers. Tinned fish offerings include over twenty different imported options such as sardines, anchovies, tuna, salmon and more.  
  
Sushi options and Omakase Bar will be executed by Master Sushi Chef Ichiro Hu featuring a selection of toro, shrimp, salmon, and a variety of fresh sashimi and sushi rolls. A few options include Pepper Tuna Tataki – pan-seared tuna with mixed greens and ponzu sauce, Summer Shack Roll – lobster, mango and seared scallop with special sauce and Sushi Sandwich – spicy salmon, spicy tuna and avocado on rice cracker with soy paper. 
  
A full beverage program has been curated by Lyons Group Mixologist Al Brown. Its cocktail program will feature classic cocktails, sangrias, tiki drinks, and more. Saltwater Coastal will also feature a wine menu and a selection of draft and bottled beers.
