The Group Hospitality has announced the opening of Omakase Room by Kanemaru, its third omakase concept, located at 40 W Hubbard St. in Chicago. This 10-seat dining space offers a 16-course menu crafted by Chef Shinichiro Kanemaru, combining traditional Japanese techniques with influences from Chicago.

Chef Kanemaru, a sushi chef with over 30 years of experience, sources fish directly from Japan to prepare each course. His approach integrates Japanese culinary precision with local and seasonal ingredients. Featured offerings include Hokkaido-sourced Uni and soy-marinated Toro.

Raised near Tokyo, Kanemaru began his career in 1992 at his family’s restaurant, Fujizushi. He later refined his skills at a variety of establishments, including Sushi of Gari in Tokyo and Ginza Kyubey, where he spent 17 years mastering omakase techniques under expert mentorship.

Kanemaru’s work reflects his dedication to omakase as both a culinary practice and a form of personal connection. His menu aims to incorporates local elements and he describes his goal as balancing authenticity with a metropolitan influence to resonate with diners.

“At my sushi counter, I am eager to focus on the unique and delicious flavors of the fish I will serve,” says Kanemaru. “While honoring Japanese tradition and culture is central to my approach, I also aim to make my mark in Chicago by blending my traditional style with a metropolitan flair that I hope will resonate with my guests.”

The restaurant’s design blends minimalist Japanese aesthetics with modern elements. Handcrafted flatware and plates sourced from Japan complement the setting, for guests seated at the counter.

“After the success of The Group’s two Omakase Room locations in New York City, we are very passionate about bringing the concept to Chicago,” said Emil Stefkov, founder of The Group Hospitality. “Chef Kanemaru is an extremely talented chef, and we are proud to be working together to bring his expertise straight from Tokyo to Chicago. The Omakase Room concept is about honoring the Japanese art of sushi, creating a haven for our chefs to experiment and grow their practice with the guests – we know Chef Kanemaru will thrive in this new space.”
