To say that Zach and Rachel Smith, the husband and wife duo behind Pizzeria Bebu, are well-versed in pizza is an understatement. The couple's favorite pizzeria (outside of their own, of course) is New York's Rubirosa Ristorante. They hold the pizza makers in such high regard that "Ode to Rubirosa," their take on the acclaimed restaurant's Tie Dye pie, features prominently on their menu. Needless to say, when the family behind Rubirosa Ristorante agreed to host a pop-up at their Lincoln Park pizzeria August 10-12 they were totally over the moon.
Regarded as one of New York's top pizzerias Rubirosa Ristorante will take over Pizzeria Bebu's oven bringing four pies straight off their New York menu to Chicago for the first time. Rubirosa pizzas will be served alongside Pizzeria Bebu salads, small plates and sweets. The New York institution's private label wine (RubiRosso, RubiBianco, and RubiRosé) will also be available for dine-in and takeaway with 100% the wine proceeds benefiting the Ann and Robert H. Lurie Children’s Hospital of Chicago in memory of AJ Pappalardo and Bill Smith.
