On Thursday, July 8, Parker Hospitality and Chef Avgeria Stapaki are opening Nisos, in the West Loop at 802 West Randolph Street. While Athens-born Chef Avgeria Stapaki is rooted in Greek traditions, Nisos is inspired by a mélange of flavors from the Mediterranean, showcased by fresh, seasonal cooking and sourced ingredients.
“Nisos marks a new chapter for Parker Hospitality,” says Parker Hospitality CEO, Brad Parker. “I set out to create a concept that is truly unique and memorable and I’m so happy that Avgeria moved here from Mykonos to help me do just that. From the design to the cocktails to the food, we hope to give Chicagoans a truly authentic Greek experience every time they visit Nisos.”
Stapaki’s menu highlights her journey cooking at restaurants throughout the Mediterranean region of Greece, Spain, Italy, and France. Nisos works with an exclusive importer to deliver fresh fish, dairy, and produce from Greece every other day - which means that fish caught on a Saturday morning in the Aegean Sea can be served in Chicago that Saturday evening. Sample menu items include:
Moussaka with potato strings, gruyere foam, cinnamon tea
Red snapper with fregola, saffron, fennel blossoms
Pavlova’s cheesecake with white chocolate monte, pistachio crumble, strawberry sorbet, meringue, raspberry powder
The Nisos cocktail menu was created by Athens-based cocktail bar, 7 Jokers, helmed by Spiros Anagnostou, a longtime friend of Stapaki. Inspired by Homer’s epic poem, The Odyssey, each cocktail represents a stop along Odysseus’s journey home to Ithaca from Troy, from the earthy and botanical “Circe'' to the sparkling, spicy “God of the Sun.” Like the food menu, the cocktail menu utilizes a variety of lesser-known Mediterranean ingredients and liquors, such as Skinos Mastiha (clear spirit with notes of floral and pine), Metaxa 12 Stars (rich, amber-colored spirit similar to brandy), and Rakomelo (anise flavored liqueur, sweetened with honey and spices). The wine list will offer a wide selection of European wines, peppered with Napa options, and the beer list will offer several Greek classics, like Nissos from Mykonos and Yellow Donkey from Santorini.
Nisos will be open for dinner every Tuesday through Sunday. Reservations can be made at Resy.
