For National Gluten-Free Day (Jan. 13), Tievoli Pizza Bar in Palatine has introduced a new menu item: handmade gluten-free gnocchi.

The gluten-free gnocchi is made from scratch using russet potatoes, gluten-free flour (Caputo Gluten-Free Flour imported from Naples), egg yolks, and sea salt. The dough is shaped into small pieces and sautéed for a lightly crisp texture. It is available in two options: 

  • Vodka sauce – a homemade creamy, tomato-based sauce, and finished with parmesan cheese

  • Pomodoro – fresh tomatoes, garlic, fresh herbs, red pepper flakes, and finished with parmesan cheese

For those looking for more gluten-free options, Tievoli offers all pizzas on the menu with a gluten-free crust. Made with Caputo Gluten Free Flour imported from Naples, Tievoli creates a 48-hour fermented gluten-free dough that looks, tastes, and feels like traditional pizza. Options include: Tievoli, Hell Raiser, Classic Cheese, and Honey Sriracha. 

For dessert - homemade gluten-free cookies and flourless cake are available.
