PostBoy—the new concept from Chef/Restaurateur James Galbraith (Houndstooth, Anemel) and Entrepreneur Ben Holland located just over an hour from Chicago has announced their 2025 guest chef series. This lineup will feature chefs from restaurants across the country from markets such as Boston, Cincinnati, and Chicago, who will join Galbraith in the kitchen in New Buffalo, MI destination.

After an inaugural dinner with Chef Zachary Engel of Galit in November 2024, the ‘Abandon Ship’ full Winter/Spring 2025 line-up will include industry friends like Chef Matt Jennings of Full Heart Hospitality (Boston), Chef David Jackman of Wildweed (Cincinnati), Chef John Manion of El Che/Brasero (Chicago), and Chef Stephen Gillanders of S.K.Y Restaurant/Apolonia/Valhalla (Chicago), creating one-night-only menus featuring fan favorites, all new creations, and collaborative dishes. The next culinary talent on deck for January is James Beard Award semifinalist Chef David Posey, co-owner of the modern American restaurant Elske in Chicago. For this collaboration, guests can expect snack-sized duck liver tarts and stuffed wings, fried devil prawns with lanzhou chili oil, smoked sturgeon with grapefruit and carrot, Duroc pork with curried apple and golden beet soubise, and more.

The six-course dinner with wine pairings will take place at PostBoy (207 N Whittaker St, New Buffalo, MI) on Sunday, January 12th. Tickets are available via Tock.
