Beverage Director Rachael Lowe can pair some of the restaurants' dishes with wines or share her wines for summertime to celebrate the food holiday. See below for a few cheese-centric dishes at both Spiaggia and Cafe Spiaggia.
Spiaggia Caviale e Burrata: Golden Osetra caviar, burrata, and chive Rabarbaro: cheesecake, strawberry escabeche, mousse, and basil Dolci Board: crostata, cheese, fruit, crackers
Cafe Spiaggia Charcuterie served with Chef's rotating cheese selection, pickles, seasonal preserves, and Foccacia Burrata with asparagus, snap pea, chive, fennel pollen, and balsamico Cacio e Pepe: spaghetti with black pepper, olive oil, and Parmigiano Reggiano Chicken Parmigiana: Pomodoro, provolone, basil aioli, garlic pretzel roll
