Chef Amat was challenged with alligator as his secret ingredient, and he created an alligator paella using the flavors of his native Spain. Priced at $68, the special paella features alligator, butifarra negra, chorizo, rabbit, shiitake mushrooms, and piquillo peppers in a pan of Valencia rice.
