Kinsley by Fairgrounds, a dawn-to-dusk eatery from Infuse Hospitality, the hospitality group behind the Fairgrounds Craft Coffee & Tea concept, is set to open at Irvine Company’s One North Wacker on Monday, September 19, 2022. Kinsley by Fairgrounds will offer Fairgrounds’ diversity of choice in craft coffee and tea plus expanded, food offerings and a cocktail bar. The new concept takes its namesake from Herbert M. Kinsley, a 19th-century Chicago restaurateur who oversaw restaurant logistics at the 1893 World’s Fair, the inspiration behind Kinsley by Fairgrounds.
Guests can expect Fairgrounds’ options such as Breakfast Tacos, Avocado Toast and Funnel Cake Fries, and new, seasonal and globally-inspired specialities including a Smash Burger with Angus Beef, American Cheese, Dijonaise, Diced Red Onions, Bacon, Pickles; Curry Bowl with Kinsley Grain Blend, Cauliflower, Salmon, Coconut Curry, Grilled Peppers & Onions, Mint Yogurt Sauce; and S’mores French Toast with Cinnamon Graham Cracker Crusted Brioche French Toast, Chocolate Ganache, Marshmallow Sauce, Shaved Chocolate. The concept will also don a dedicated Bar Bites menu, featuring shareable fair choices like Caramel Corn, Mini Corn Dogs, Nachos and more.
Kinsley by Fairgrounds will offer Fairgrounds’ selection of craft coffee roasters, colorful teas and elixirs, and an array of cold brews, lattes and sparkling beverages on tap. Kinsley will also offer classic cocktails, with its signature drink, Applegreen’s Old Pal with Ej Apple Brandy, Makers Mark, Luxardo Cherry Syrup, Sour, inspired by H.M. Kinsley’s bartender, John Applegreen.

Kinsley by Fairgrounds will be open Monday - Thursday 6:30AM - 8:00PM and Friday 6:30AM - 7:00PM. The bar will open Monday - Friday at 11:30AM.
