Jaleo Chicago (500 N. Clark Street) has announced the appointment of a new executive chef along with updated menu items, design enhancements, and more.
The new Executive Chef at Jaleo, John Borras, brings over three decades of culinary experience to the restaurant. Originally from Venezuela, Borras' passion for cooking was deeply influenced by his Spanish father, who encouraged him to explore fine dining. His family's Spanish heritage has always been central to Borras' culinary style and menu development.
Joining Borras at the helm are Executive Sous Chef Miguel Maldonado and Sous Chef Michael Padilla. Borras has been in roles as Director of Food & Beverage for Marriott Hotels and as Executive Chef at the Renaissance Hotel and the Museum of Science and Industry. He has also opened his own Spanish-inspired establishments, including 1492 Tapas Bar and Macarena Tapas.
“The new menu at Jaleo stays true to its authenticity,” shares John Borras, “This is what drew me to this role. I love to cook and share Spanish cuisine because it embodies the flavors and memories of my childhood.”
Borras' culinary philosophy focuses on creating Spanish-inspired dishes that transport diners to Spain. He has introduced a lunch service with new items including the JLT, Futbol Club Barcelona, and Four Cheese Sandwich. Additionally, he has recreated the dinner menu, adding dishes like Cachopo, Iberico Pork Meatballs, Grilled Beef Skewers, Grilled Chicken Skewers, and a Beef Tenderloin over bread with Manchego cheese and red pepper. The new brunch offerings feature additions such as Paella Ribeye and Spanish Country Salad. The updated happy hour menu now features additional wines and beers, along with beef skewers.
Along with menu changes, Jaleo has introduced several updates, including the creation of a lounge, new lighting, added greenery, a range of tapas and larger plates, and a new patio. The restaurant, originally designed by Barcelona-based firm Capella Garcia, features a 240-seat interior. The speakeasy, Pigtail, located below Jaleo, has also been updated with a new entrance and host stand.
