A trio of hospitality veterans with decades of experience, has joined forces to launchHearth Hospitality, a new Chicago-based restaurant group. Led by Gregg Horan, Bill Veremis and José Sosa, the group’s inaugural project is The Greggory—a 10,000-square-foot, high-design restaurant featuring reimagined American classics infused with Mediterranean flavors. Slated to open its doors in early 2025 at The Arboretum in South Barrington, The Greggory is the group’s direct response to the growing demand for a dining experience in the northwest suburbs.
About Hearth Hospitality Founders:
Gregg Horan, former Managing Partner and Director of Operations at Gibsons Restaurant Group, spent 26 years shaping brands, including Gibsons Steakhouse, Gibsons Italia, RL (Ralph Lauren Chicago), and The Polo Bar in New York.
Bill Veremis, Managing Partner of Rosewood Steakhouse Group, played roles as an opening manager at Carmichael’s Chicago, RL, and QP Greek.
José Sosa, Executive Chef and Partner, served 12 years with Gibsons Restaurant Group, opening Gibsons Italia and leading kitchens at Hugo’s Frog Bar & Fish House and LUXBAR. Most recently, the Mexico City native was Executive Chef and Partner at UMMO in River North.

“There’s an incredible community of well-traveled diners in South Barrington and the surrounding suburbs who appreciate great food and hospitality,” says Horan, whose name inspired The Greggory, and illustrates the group’s goal to present the “gold-standard” of personalized hospitality to their guests.
“These folks would love to have a neighborhood spot with a big-city vibe right here in their own backyard,” says Bill Veremis. “Whether you’re enjoying a casual bite at the bar on a Tuesday, or going big for a special occasion in the dining room, our focus is on creating an exceptional experience. No shortcuts—this is what we do best.”

For their first project, Hearth Hospitality enlisted Dunne Kozlowski, the full-service design studio behind some of the region’s restaurants including Adalina, Gino & Marty’s and The Graceful Ordinary. The Greggory will feature classic yet modern design, including an open “show kitchen,” wood-fired hearth & rotisserie, wine room, fireplace and more. Chef Sosa’s menu of reimagined American classics will take full advantage of open-fire cooking, complemented by a house-made pasta program and Mediterranean influences. Drinks will showcase classic cocktails re-imagined with an emphasis on Martinis, bourbon & whiskey, alongside a comprehensive list of Old World and New World wines, including Reserve wines.
