The next burger collab in the Clybourn Collaboration Burger Series is the Joey Purp Burger. Joey grew up loving burgers with bacon but has changed his ways and now follows a vegan lifestyle. Joey and Chef Henry worked closely together to make this vegan burger.
The Purp Burger is a brown rice, shiitake mushroom and cashew burger that’s made with miso paste, coconut aminos and a sweet and spicy Virtue Cider Michigan Apple glaze. It’s topped with pickled shallots, heirloom tomatoes, roasted garlic, avocado aioli and carrot bacon and served up on a vegan pretzel bun and paired with waffle fries. Each burger also comes with a custom 5oz. Joey Purp Chicago-style mild sauce bottle that you can keep.
The artwork on the bottle was done by Nikko Washington and proceeds from the August Collaboration Burger will benefit Fourtunehouse to support local artists.
