This month the Goose Island Clybourn Brewhouse hase partnered with Dark Matter Coffee to release the sixth burger in their Clybourn Collaboration Burger Series, the Dark Matter Coffee Burger. Chef Henry, of Goose Island, worked closely with Dark Matter Coffee founder, Jesse Diaz, to make a burger that not only honors his Mexican-American heritage but also celebrates coffee.
The Dark Matter Burger is an all-natural, house-ground Amish turkey burger with a Dark Matter Coffee mole sauce that features Sleep Walk Barra De La Casa chocolate, DMC Honey Bear honey and Oaxacan single-origin coffee. The burger is topped with house-smoked DMC-rubbed bacon, Manchego cheese, cascara pickled shallots and avocado relish. It’s served on a brioche bun with sweet potato fries and a side of mole dipping sauce.
The Dark Matter Burger is now available for dine-in or carryout at the Goose Island Clybourn Brewhouse through the month of May with a portion of the proceeds benefiting Illinois Women in Cannabis.
