Chef Jason Vincent and his team have unveiled their plans to reopen and revitalize Giant and Chef’s Special Cocktail Bar this spring. Since the pandemic, both restaurants have been operating with a limited staff and menu, but the team is ready to enter this new era of dining in their own way.
After more than a year of closing, reorganizing, pivoting, and doing it all again, Chef Vincent and his partners, Josh Perlman, Chase Bracamontes, Aaron Kabot, and Tom Scodari realized they needed to shake up their original concepts in order to keep their staff and guests safe and happy. This spring, they’ll reopen the doors at both Giant and Chef’s Special with new perspectives and a fully immunized staff.
Giant will maintain their same ethos of Midwestern fare, opening for dinner in their dining room and on the patio on Wednesday, April 28. While some signature dishes will remain, Giant will launch with a mostly brand-new menu. Giant will first open with dinner service Wednesday – Sunday and will expand to additional nights later in the season.
“We opened Giant nearly 5 years ago and many of our funkier dishes like the sortalini and uni shooters quickly became mainstays,” says Vincent. “I’m ready to turn the menu on its head and come up with new dishes that excite people. Those classics might make an appearance every once in a while, but get ready for something new.”
East of Giant in Bucktown, Chef’s Special Cocktail Bar is making some changes, too. A silver lining of the pandemic, CSCB saw a huge uptick in take-out orders and quickly realized that their menu of American-Chinese dishes was an option for people looking for comforting meals that could feed a crowd and taste great the next day. Leaning into this new way of dining, Chef’s Special will expand its take-out business and focus more on its bar service and outdoor dining for those who’d like to visit. They are currently open for outdoor dining and takeout and will reopen the bar in early May.
“Chef’s Special had only been open for 2 months when the pandemic hit, so we really only got a small taste of operating with guests in the dining room” says Chef’s Special GM Chase Bracamontes. “It’s been great to interact with people through take-out and outdoor service but we can’t wait to see people sitting at the bar again.”
