Beginning Friday, June 30th, Lachowicz will unveil his summer tasting menu at George Trois, paying homage to a historic restaurant that provided much of the inspiration and experience that led him to form the George Trois Group. While it may have shuttered back in 2007, the impact that Le Francais in Wheeling had on the fine dining and French culinary scene in Chicagoland meant the world to Lachowicz.
At 16, the young cook (Lachowicz) did as many in the industry did in that time – saved his wages week after week until he was able to afford a visit to the restaurant. “I dined there, and immediately knew that I wanted to make my career in French cusine,” says Lachowicz. In his nearly 4 decade-long career, Michael spent a short period of time working under Jean Banchet at Le Francais, and then another several years under the new ownership of Mary Beth and Roland Liccioni and the culinary leadership of Chef Patrick Chabert. Through his tenure at Le Francais, Lachowicz confirmed a significant part of his culinary identity and says that his employment there was a true “master class”. Through this new menu rotation at George Trois, Lachowicz will take an opportunity he’s always wanted to take and honor Le Francais’ culinary approach in tandem with his signature style. The seven-course menu highlighting interpretations of dishes – several of which that Lachowicz has not prepared in-restaurant for over 20 years – will flow through George Trois’ 14-seat dining room through September.
The Tribute to Le Francais seven-course tasting menu is priced based on demand at a graduated rate (Friday at $145, Saturday at $185, and Sunday at $135), and includes Lachowicz’s interpretations of signature Le Francais dishes like Champignon Royale, Lyon en Brioche, and Souffle Grande Marnier. Wine pairings from George Trois Group’s Wine Director Brian Duncan are available for an additional cost that varies depending on the diner’s preference.
