Galley Group, the team behind food hall concepts in Pittsburgh, Cleveland and Detroit, has leased 12,912-square-feet at 1115 W. Fulton Market Street, owned by McCaffery. The food hall and restaurant accelerator provide Chicago’s culinary talent the opportunity to launch a new concept in a low-cost and low-risk environment.
McCaffery will collaborate with Galley Group co-founders Tyler Benson and Benjamin Mantica to customize the Chicago location at the corner of Fulton Market and May Streets, just three blocks from the CTA’s Green Line Morgan Station. The space will accommodate the food hall’s unique needs, including five fully built-out kitchens, communal seating, a 30-seat bar featuring an innovative cocktail program and curated craft beer lineup, a full coffee and wine bar, and an event space. Dimit Architects is designing the food hall space.
“We’re thrilled to be coming to Chicago and in particular, the Fulton Market neighborhood,” says Mantica. “It’s exciting to have an opportunity to highlight Chicago’s culinary talent and play a role in launching new concepts in such a renowned culinary city. Our goal is to provide a unique dining experience for our guests, while also providing a meaningful platform for chefs and restauranteurs to launch their new concepts in Chicago.”
The project is the fifth food hall from Galley Group and is slated to open in Spring 2019. Benson and Mantica drew inspiration for the concept while serving in the U.S. Navy and their travels abroad. Galley Group differentiates itself from other food hall concepts by offering chefs the infrastructure to bring their concepts to market including a space as well as business strategy and support. The team currently operates Smallman Galley and Federal Galley in Pittsburgh, Ohio City Galley in Cleveland (opened October 2018), and Fort Street Galley in Detroit (opening November 2018).
