Electric Greens, a new concept from 16” On Center, is set to open at Revival Food Hall (125 S Clark St.) this January. Electric Greens is a salad bar pairing fresh greens with bright vinaigrettes, punchy citrus, and flavorful ferments which all bring flavors that also make you feel good. Savory, slow cooked sipping broths (chicken and mushroom), a rotating collection of avocado toasts and an assortment of spirit-free beverages complement the salads for a lunch-time experience.

Elements of the Electric Greens salad:

  • Greens: The salad menu offers eight salads that begin with various combinations of baby kale, spinach, savoy cabbage, and romaine. 

  • Acid: A punch of citrus and acidity comes from fermented elements like pickled red onion, pickled broccolini, cured black olive, pickled raisin, pickled apple, turmeric cauliflower and pickled beets.

  • Crunch: Toppings like hemp seed crunch, coconut bacon, puffed rice, chili quinoa crisp, sourdough croutons, and seeded crackers add texture and crunch.

  • Flavor: Elements like Zaatar, fresh herbs, ricotta salata, everything goat cheese, and roasted squash add layers of flavor.

  • Vinaigrettes: Housemade vinaigrettes are offered with flavors like curry fig, white truffle balsamic, Thai ginger, preserved lemon, smoked paprika, pepita, and electric ranch.
