Edie’s All Day Café is gearing up to open its second location (at 354 W. Hubbard) this summer (now slated for July) and with it, the café has shared that it’s hired a new Culinary Director, Chef Amanda Downing.

Chef Downing has plans to expand and further develop Edie’s food menu to cater to guests morning, noon, and night.

Chef Downing and co-founder of Edie’s, Arturo Gomez, collaborated and worked together at Rockit (12+ years). They note that they have a great working report and look forward to Chef Downing taking Edie’s into this next chapter of expansion and service.

A little more about the new Hubbard space….

  • The Design Team: Leading the interior design is Variant Collaborative – a female-led creative design studio who’s fronted projects such as Pacino’s (South Loop), Aba (Austin, TX).
  • The Look and Feel: The Variant team has taken a fresh approach to Edie’s modern, Bohemian-influenced space, while keeping in tow with the overall bright atmosphere the original location had. The team leaned into the natural and feminine aspect of the design, which includes intimate spaces within the space, deep green and natural teal colors, and boho furniture and floral and fauna themes that add a layer of character throughout the café. 
  • The Lighting: the Edie’s space will include decorative lighting that creates and compliments an ambiance and mood throughout the space.
