Cupitol Coffee & Eatery is opening its third location at 135 N Clinton, Chicago IL, (Randolph & Clinton) in late June 2021. Cupitol Coffee & Eatery is a woman-owned all-day European-style restaurant with two other locations - Chicago’s Streeterville and Evanston.
Like the other locations, Cupitol Coffee & Eatery West Loop will feature an all-day menu that includes breakfast, light lunch, and brunch options. The West Loop location will also act as Cupitol’s expanded bakery commissary, with a large part of the space dedicated to creating all of their house made goods, including pastries, breads, and a range of sweet and savory items.
The restaurant, open 6am-4pm daily, will focus on quick service to accommodate busy lunch hours and commuters making their way to and from the office. Cupitol will continue to focus on online ordering and will have a mobile kiosk in the space to make service efficient for guests while limiting wait times for their orders.
Monday - Friday, guests will find Cupitol West Loop an optoin to grab a quick breakfast or lunch, plugin & work, or meet up with friends and family. The weekends offer brunch service with music, patio seating, and brunch cocktails and dishes.

The Space
The space has a rustic, European look with a Chicago twist. Just inside, there is a kiosk for quick ordering and a grab-and-go cooler with ready-made drinks, cold press juices, and light snacks. Guests will order at the signature custom walnut bar that leads them into the space, which seats up to 50. Design highlights include a white-washed tin ceiling, modern gold light fixtures, wrought iron, and wood topped tables, soothing white walls, subway tiling, and industrial CTA steel beams. The in-house bakery and commissary will take center stage. Located behind old-world metal and glass-paned windows, guests will see the kitchen action and get a behind-the-scenes look at the baking process. Seating includes a mix of communal, two tops and a wrap-around corner couch.
West Loop Patio
The patio space will seat 30 guests to start along Clinton Street. The patio space will expand later in the summer to a covered area underneath Chicago’s ‘L’ train tracks. The dog-friendly patio will offer seating, umbrellas and greenery.
In-House Bakery
Cupitol creates all of its sweet and savory pastries, breads, buns, and more via their in-house bakery. The bar will feature grab & go bread options for easy pick up. The West Loop bakery and commissary kitchen serves each of Cupitol's locations as well as local restaurants who need fresh bread options. All pastries and desserts are available in-store or available for pre-order 48 hours in advance. Bakery highlights include Brioche Bread, Brioche Buns, Mango & Chocolate Croissant, Pistachio Croissant, Ham & Gruyere Croissant, Pecan Roll, Mini & Large size fresh fruit tarts, Sneaky Bar - housemade Snickers, and Tiramisu.
Coffee Program
Coffee is source directly from Greece. Cupitol receives a shipment of the coffee by air every two weeks to ensure freshness. “I chose our espresso because it is roasted consistently. It provides a more intense, chocolaty flavor. There’s also a floral note that gives it an earthiness! It’s 100% Arabica and is considered a specialty coffee,” said Sellia Georges, owner, Cupitol Coffee & Eatery. “Instead of ordering an iced latte or Americano, we encourage guests to order a fuller body version of these drinks like our Freddo options, espresso, or cappuccino.”
