The Robey Hotel (2018 W North Ave) will launch a new bar concept, Clever Coyote, on October 6th - nearly 6 years after the hotel’s 2016 opening in Chicago.
 
The property is in Chicago’s Wicker Park-Bucktown neighborhood with the new cocktail bar, overlooking the city’s  Milwaukee/Damen/North intersection.
 
Inspiration

Clever Coyote is an ode to the history of The Robey’s 1929 landmarked building. The cocktail bar’s name is reminiscent of the name locals once knew it as: ‘The Coyote Building’ (derived from its spire resembling the upturned nose of a howling coyote). 
The new second floor concept, complete with its glowing psychedelic light installation, will serve up a nostalgic '80s and '90s pop culture, represented by classic rock atmosphere and games like Street Fighter and shuffleboard. 
 
Tiki-Inspired Cocktails

Beverage Director Mike Choi has curated cocktails that nod to the Tiki trend comeback that arose in the '90s. Guests will find an array of drinks that draw off the kitschy, tropical theme. 

Tiki-Inspired drinks include: 

  • Rye Tai, Money-Cat (lavender, lemon, and Aquavit)
  • Black Hole Sun (mezcal, tequila, roasted grapefruit syrup, lime, and activated charcoal)
  • Suckerpunch (clarified gin milk punch with pineapple and lime).

Classic cocktails: 

  • Sazerac
  • Tokio Sour (a play on a Whisky Sour with Toki, yuzu, and egg white)
  • The Robey’s beloved signature cocktail, Oaxacan on Broken Glass (blend of Banhez Mezcal, Ancho Reyes, lime, and fire bitters)  

Steamed Buns Reminiscent of Nostalgic Sandwiches

Chef Michael Elliott will offer a selection of chicken wings and steamed buns inspired by worldly sandwiches that pair with Choi’s cocktails.

Steamed buns include: 

  • Smoked BBQ Pork Belly with Maple Glaze
  • Philly Cheesesteak, Fried Chicken with honey chili glaze
  • Tempura Shrimp with Chipotle Sauce
  • Crispy Falafel with Herbed Tahini

Wings: 

  • Buffalo
  • Chili Honey Glaze
  • Chipotle BBQ

Located on the second floor of The Robey, Clever Coyote will be open Sunday-Thursday 3pm-11pm and Friday-Saturday 3pm-12am.
