Chef Sujan Sarkar, co-founder of Indienne and Sifr, has announced the opening of Swadesi, an Indian-inspired coffee shop. Located in the West Loop at 328 S. Jefferson St, Swadesi will be open Monday through Friday from 7 a.m to 3 p.m, offering a cafe menu of breakfast pastries, lunch dishes, coffee and chai, all rooted in traditional Indian cooking flavors. Pronounced “swuh-deh-shee”, Swadesi means “from one’s country” and Chef Sarkar is eager to introduce the cafe scene of his home country of India to the city of Chicago.
Swadesi’s chai and pastries are all made fresh daily in-house, blending locally sourced Midwestern purveyors with traditional Indian-sourced spices, flavors and ingredients. The Masala Chai – served both as traditional hot chai and nitro chai – uses the traditional method of caramelizing milk blended with ginger, cardamom, rose petal and other aromatics.
A number of sweet and savory croissants are available, including a Chocolate Croissant coated in Indian chocolate custard and carved into a square shape, an Almond Croissant made with almond halwa, and a Butter Chicken Croissant served with burrata and pickled onions. An additional savory item, Swadesi offers a Samosa Croissant made with tamarind, mint chutney and crispy potato. The Breakfast Egg Sandwich is packed with avocado and house made lightly spiced potato rosti.
Chef Sarkar is also partnering with Yash Kishinchand, Swadesi’s General Manager and a Culinary Institute of America graduate.
