Chef Bill Kim’s Pizza & Parm Shop, a new virtual restaurant concept from the chef and Cornerstone Restaurant Group, is opening in the city Wednesday, February 3, operating out of urbanbelly's kitchen in the heart of Wicker Park.

Available exclusively for takeout through DoorDash, this pop-up offers Chef Bill Kim’s takes on pizza and sandwiches. The signature menu of customizable flavors is reminiscent of urbanbelly’s Asian fare and ingredients.

The menu spotlights Detroit-style pizza with such specials as Korean BBQ Ground Beef & Kimchi, Double Smoked Pork & Pineapple and Ricotta & Arugula. Guests can also build their own pizza with a combination of those toppings or more traditional options such as pepperoni, sausage and mushroom. In addition to pizza, the menu features both a classic Chicken Parm Sandwich and Cauliflower Parm SandwichCauliflower “Wings” with the choice of either Buffalo Seoul or Sesame Soy sauces.  

“I had a lot of fun building this menu with flavors I love but that you wouldn’t necessarily expect on a pizza,” says Kim. “This menu pays homage to my childhood and reflects the many different cultural influences in my life that are evocative of the diversity in Chicago.” 

Born in South Korea, Kim grew up on the northside of Chicago, which is where his introduction to and love of Italian cuisine began from being surrounded by Italian friends. He went on to Kendall College and immersed himself early in his career alongside such chefs as Charlie Trotter, David Bouley and Jean Banchet and helped set off the wave of fine-dining chefs branching into casual fare with urbanbelly’s opening in 2008, where his border-blurring approach to cooking and Asian cuisine is on full display.  

Chef Bill Kim’s Pizza & Parm Shop hours are 11 a.m. to 9 p.m. Wednesday through Sunday, starting February 3.
