Chapel Street Café, now open, from Australian hospitality veteran and investor Shawn Uldridge, one of the minds behind the Publishing House Bed & Breakfast, will take over the restaurant space at the Hilton Magnificent Mile, 198 E. Delaware Place. Chapel Street Cafe will be Chicago's first-ever Australian-style cafe and restaurant, serving breakfast, lunch, and dinner. 

“I’m thrilled to bring the concept of an Australian café to Chicago,” says Uldridge. “This project means so much to me—not just because it reflects my roots, but because it’s a chance to share the warmth and vibrant flavors of Australian hospitality with this city. From the recipes to the design, Chapel Street is a labor of love. I hope it becomes a welcoming spot where Chicagoans can enjoy anything from a flat white to a meal with family and friends.”

Originally from Melbourne, Australia, Uldridge moved to Chicago in 2014 to open boutique bed and breakfast, The Publishing House, and modern American wine bar, The Press Room, in Chicago’s West Loop neighborhood. The Press Room is now owned and operated by the team behind West Town’s new Asian street food concept, Jook Sing.

Chapel Street Café offers takes on Aussie dishes with a Chicago twist. In the kitchen, Executive Chef Valentin Hernandez will craft dishes that highlight Australia’s culinary traditions, with most items baked, smoked, and prepared in-house.

The menu will feature dishes like zucchini and corn rosti topped with house-smoked salmon, whipped labneh and two poached eggs drizzled with chive oil, as well as options like traditional Aussie baked beans served on sourdough toast and topped with poached eggs. Pair your dish with coffee roasted on-site.

The beverage program offers cocktails including the Lygon Street Negroni, the Viper, and the Kangaroo Cocktail, while the wine selection features exclusively Australian labels. The coffee program highlights Australian brews, such as flat whites, crafted with beans roasted on-site.
