Pendry Chicago has revealed all-new offerings for the return of Château Carbide, the property’s Côte d’Azur-inspired open-air rooftop perched 24 stories above the Magnificent Mile.

Seated atop Chicago’s Carbide & Carbon building, aptly nicknamed “The Champagne Bottle” after its golden topped dome, the rooftop was not historically accessible to the public until its transformation into a indoor-outdoor bar upon debuting in the summer of 2021. Their al fresco terrace offers city skyline views and French Riviera-inspired décor. Indoors, the 80-person space is circled by floor-to-ceiling windows and velvet banquette seating, as well as a gold-clad main bar completed by a display of specialty rosé from Château d’Esclans.

The rooftop's light bites and signature hand-rolled sushi service is helmed by Pendry Chicago’s Executive Chef Jeff Vucko (The Langham, Public, theWit) and features new offerings like the Midway Roll, with Madai snapper, Hamachi, yuzu koshu, cilantro and avocado, and the Spicy Salmon Hand Roll, with cucumber, scallions, Salmon roe and spicy ginger sauce, as well as a curated selection of sashimi including uni, bluefin tuna and more. They offer a collection of rosé wines served by the glass, bottle, magnum, or jeroboam (3 liters).

On the rooftop this season is an all-new Moet Champagne spritz bar, where guests can select variations on the summer sipper like the Chandon Garden Spritz, featuring citrus and earthy Gentian root, the Tropical Spritz, made with Amaro Nonino and pineapple, and the Plum Spritz, made using Cocchi Rosa and Umeshu, a Japanese plum wine. Cocktail drinkers will be able to try a brand-new menu of craft drink offerings from Pendry Mixologist Nick du Mortier, including Pat Morita with Patron Reposado, rose, lime and pink grapefruit and the Kishi Bashi with Casamigos Mezcal, jalapeno cordial and lime.

As the sun sets over Chicago, the venue will transition from day to night with rosé and champagne bottle service under the glow of flickering candles and oversized lanterns plus a new acoustic music series beginning in July on Fridays & Saturdays from 6 to 9 p.m. and Sundays from 1 to 4 p.m.

Chateau Carbide is open 5 p.m. to 11 p.m. Wednesday – Thursday, 2 p.m. to 12 a.m. Friday, 12 p.m. to 12 a.m. Saturday, & 12:00 p.m. to 11 p.m. Sunday. Beginning July 1st, they will also be open on Mondays & Tuesdays from 5 p.m. to 11 p.m.
