Chef Richard Sandoval has announced his first cocktail-forward Nikkei lounge, Casa Chi, now open at the InterContinental Chicago Magnificent Mile.
With a name meaning “Earth House” in Spanish and Japanese, Casa Chi blends the elements of Japan and Peru. The beverage program combines the smokiness of mezcal with the traditional flavors of sake. Led by Head of Mixology Riesler Morales, Casa Chi offers an agave-forward tequila and mezcal list, with over 142 selections available in flights, tastings and mixed cocktails. The menu integrates Japanese influences with sake-based cocktails, sake tastings and Japanese beers. Selections on the menu include the Mezcal Gibson made with a coconut fat-washed del maguey vida mezcal, vermouth bianco and lacto-fermented cucumber and the Japanese pisco made with jasmine and green tea infused with pisco, passionfruit and lychee, kumquat and angostura bitters.
Complementing the Casa Chi’s beverage program is the culinary menu. The offering consists of twists on traditional Nikkei flavors, with shareable plates such as Tuna and Salmon Nikkei Tiradito, a Peruvian take on sashimi. The menu also features cuts of sashimi-style proteins, like prime beef tenderloin, boneless beef short rib, wagyu beef ribeye and scallop anticucho, all priced per ounce and cooked on Ishiyaki hot stone at the table.
