crispy shallot and chive with citrus dressing
; Crab Salad with jumbo
lump crab, celery, celeriac, snow peas, green apple, lime, cilantro, scallion,
horseradish mayo and pink pepper
;Riviera Salmon with grilled
asparagus, braised fennel, and spring pea purée, Arbequina olive oil emulsion
and lemon zest; and
Clementine Vacherin with
blood orange coulis, clementine sorbet, white chocolate mousse, and crispy
meringue
