Chicago-based 4STAR Restaurant Group has announced The Perch, an all-new family-friendly brewery, plus full-service restaurant + bar coming to Wicker Park this Summer. Located at 1932 W Division, the 5,000 square-foot space will pour 12 beers and serve an all-day food menu featuring signature meats and veggies made on a wood-fired grill, salads, and sandwiches to go with them.
A partnership with Finch Beer Co., The Perch will have an onsite brewing facility with 12 barrels and seating for 135 throughout the bar and dining room area, with an outside sidewalk cafe that seats 58. Heavy construction began earlier this year to transform the bow truss-style warehouse building into The Perch.
The space, designed by CBD Architects, was revamped with the intention of creating a light and airy dining atmosphere with the installation of four large skylights, which will illuminate the heavy timber roof structure and brick textures throughout the building. Updated finishes rely heavily on natural materials such as bamboo in the Malibu style lighting and the charred end grain of reclaimed pine framing lumber. Tiles are handmade in Morocco using traditional methods passed down by generations of artisans.
“We want The Perch to be more than just a local watering hole, but an all-occasion hangout, filled with fresh-brewed beer, craft cocktails, great food and everyone you call family,” said Doug Dunlay, one of 4STAR’s owners. “Thanks to our partnership with Finch, our exclusive beers will always be on tap, just waiting to be paired with something seasonal from the wood-fired grill and rotisserie.”
The Perch will be open 7 days a week for lunch, dinner and weekend brunch, featuring a brewery with easy-drinking beers that complement a seasonal menu centered around a wood-fired grill and rotisserie. Items include steak with buttermilk béarnaise, confit potatoes and arugula, slow-roasted cauliflower with lemony yogurt and pistachio gremolata. Bar snacks will also be served, featuring maple glazed peanuts with candied bacon, homemade corn nuts and fried cheese curds with giardiniera aioli.
Classic 4STAR staples like the Wrightwood salad, rotisserie chicken and turkey burger will also be on the menu.
The onsite brewery will be led by Josh Kunzli, Finch’s current Head Brewer. Kunzli will have a rotating selection of beer on tap – including Finch favorites like Tacocat, Plumage and Songbird. According to Jamie Lisac, Finch’s owner, additional house crafts are in the works, described as, “a variety of beer for every type of beer drinker, tailored to The Finch concept. We will also feature exclusive and limited release beer for those who always want to try something new.”
Prices will range on average of $13-15 per person for lunch and $20-25 for dinner. Kids will also eat free, an offer that 4STAR extends at multiple other locations.
The Perch will be 4STAR’s eighth location, after recently being forced to permanently close the doors to two of their restaurants due to the surrounding effects of COVID-19.
“The Perch is a project that we have been planning for a while and we weren’t going to let this pandemic stop us. It’s important for us to come out on the other side of this by creating a neighborhood restaurant and bar where our guests can feel welcome, safe and healthy, as we all adjust to the new normal together,” said Dunlay.
Positivity continues to flow in all directions for the team behind neighborhood staples like Smoke Daddy, Crosby’s Kitchen and Tuco and Blondie. Since March, 4STAR, together with their community partners, have fed over 50,000 frontline hospital workers and families in need from Chicago Public Schools.
