SOMOS Hospitality, the team behind Tzuco, has announced UMMO, a contemporary Italian dining concept opening in River North at 22 West Hubbard Street in July.

Helmed by Principal/Co-Founder Germán González and Chef/Partner Carlos Gaytán, with cuisine by Chef/Partner José Sosa and design by Karen Herold of Studio K Creative, UMMO will offer regional Italian cuisine. A soon-to-be named, second-floor social lounge for an aperitivo hour or post-dinner drink.

UMMO marks the second restaurant by SOMOS Hospitality in Chicago’s River North district. 

“This is an exciting time to expand our presence in Chicago,” said Germán González. “The downtown Chicago community has been so good to us, and we see a distinct growth opportunity forHubbard Street. It is ready for a fine-casual concept of this kind, and we are proud to be among fellow business owners working collaboratively to bring exciting culinary talent and even more vitality to the area.”

Chef Jose Sosa traveled to Italy on multiple occasions, and fell in love with Emilia-Romagna in the north and Puglia in the south and Chef Sosa’s offerings at UMMO will celebrate these regions. 

“In Italy, it’s all about the natural flavors directly in front of you, and those which are cultivated in your backyard,”says Sosa. “The best restaurants I have visited are those where the chef does very little to manipulate those flavors, allowing ingredients to shine to their full potential at the precise moment that they are at their peak. This approach speaks to me and is something we will replicate in UMMO’s kitchen.”

Lunch and dinner options will offer a daytime bite or a hearty meal, while happy hour will feature a range of shareable bites and wine and cocktail specials. 

On the weekend, brunch will take centerstage with sweet and savory creations and takes on the mimosa, Aperol Spritz and Bloody Maria.

Desserts have been designed in partnership with Pastry Chef Jesús Escalera, while the beverage program is guided by Sommelier Zackariah Taylor. 

“We are really excited about this menu, which José has been perfecting for several months,” said Carlos Gaytán. Gatyán is notably the first Mexican-born chef to earn a coveted Michelin star after crossing the U.S. border at 19 and working his way up the ladder – from dishwasher to now co-owner. “Jose’s talent shines through his food and I can’t wait for everyone to experience the dishes he’s putting out there. It’s a proud moment to be part of this new restaurant in a partnership capacity, and to see a fellow chef and someone like a brother to me from Mexico pursuing new culinary frontiers in the city we both now call home.”
