To honor National Dessert Month in October, the Albert (located at 228 E Ontario) is offering an exclusive Dessert Tasting Menu, curated by the Albert’s Executive Pastry Chef Vanarin Kuch. Chef Van has curated a four-piece flight that pays homage to outer space and Chicago, all with an Albert flair. This exclusive flight is available Sunday, October 14 through Saturday, October 20 from 5pm to close. The exclusive flight, $36, includes:
The Bean, a dark chocolate mousse, layered with hazelnut feuilletine and flourless cake, colored silver to replicate the bean in Millennium Park
General Relativity, acoconut parfait, with a coco jam center, honey tuiles fabric, and a pumpkin cremeaux. Colored in a white chocolate spray with honey tuiles piped into a woven pattern to mimic space-time fabric, and laid on top the mousse to show the curvature of space-time fabric "bending" around the object.
Earth, ademi-sphere filled to mimic layers of the earth (core, mantle, crusts) with a spicy cassis core, blackberry jam, goat cheese mousse, and rye pretzel tuilesglazed in a white chocolate to resemble Earth
Hyperion, a horchata ‘cloud.’ Replicating Saturn's only non-elliptical moon, this square shaped cloud is light and airy, filled with toasted sesame cream and served with avocado crumbles
