Raised | An Urban Rooftop Bar is a rooftop bar in Chicago’s Loop has shared its new summer menu. 

The summer menu at Raised features a variety of dishes. Chef Travis Wilson focuses on integrating fresh flavors into his cuisine with an emphasis on local Midwest ingredients, sourcing only within 300 miles of the hotel. Raised partners with many local and regional farms and purveyors. 

The Spring Rolls and the General Tso Tofu both feature tofu from Phoenix Bean Tofu – one of the first manufacturers of tofu in Chicago which has been in business for more than 30 years. For those who order the Mini Funnel Cake, they’ll discover brandied peaches from Klug Farm, a family farm in St. Joseph, Michigan. Mick Klug took ownership of his parents’ 40-acre farm in 1974 and has since expanded it into a 120-acre family business with his daughter, Abby, and son-in-law, Mark.

With the Ravioli, guests will taste Mighty Vine cherry tomatoes from Chicago, Neuske’s Bacon from Wittenberg, Wisconsin, and Eli’s Sweet Corn from the Strom Family Farm in Campton Hills, Illinois. Or when taking a bite out of the Grilled Ciabatta Caprese, guests will indulge in the freshness of Belgioioso Cheese from Green Bay, Wisconsin, La Quercia prosciutto from Des Moines, Iowa, as well as greens from Gotham Greens and tomatoes from Mighty Vine in Chicago. 

At Raised, the signature summer cocktail menu features ingredients with seasonal flavors. On the menu, find Summer Lovin’, a mix of Gran Centenario Plata, red wine, St. George Basil Brandy, blackberry purée, lime, and simple, or Dirty Chai Town featuring Coffee-Infused Old Grand Dad Bourbon, Caffè Borghetti Espresso Liqueur, sweetened condensed milk, and chai.  

The summer cocktail menu features Few Spirits, a distillery in Evanston, Illinois, in the Naughty By Nature cocktail, a combination of Few Breakfast Gin, Canton Ginger Liqueur, Dolin Blanc, hibiscus thyme shrub, and cucumber tonic. For beer lovers, Raised offers a variety of draft beers which are all brewed in Chicago. This summer, Raised is also continuing its partnership with Pilot Project, a brewery incubator, tasting room & café located in Logan Square, to offer the project's rotating craft seasonal for guests.
